Tiffany's Coconut Soup

1. Put below ingredients in a soup pot over medium - high heat

2 cups chicken stock

1 cup coconut milk

2 teaspoons grated fresh ginger

2 teaspoons fish sauce (I use Red Boat brand)

1 teaspoon grated lime rind

1/2 teaspoon grated lemon rind

3/4 t salt - 1/4 t black pepper

2. Bring this to a simmer and cook 5 minutes

3. Add in the following ingredients

3 tablespoons lemon or lime juice

2 cups button mushrooms sliced

1 tablespoon chopped fresh cilantro

4. Cook 6 minutes on simmer or until mushrooms are tender-crisp (I like them to not be totally soft)

5. Can stir in cooked shredded chicken if desired
