Mixed Greens Strawberry Salad with Balsamic Lemon Vinaigrette

Spring is almost upon us and the warmer weather beckons us outside to explore the vibrant colors and smells. What better way to welcome the season than with a bright, crisp salad which showcases the best of Spring’s bounty.

 

Mixed Greens Strawberry Salad with Balsamic Lemon Vinaigrette

Mix of salad greens such as arugula, romaine, baby lettuces, spinach

1 c fresh strawberries, quartered

½ c whole or halved walnuts, toasted

¼ c blue cheese, crumbled

3-4 radishes, thinly sliced

½ cucumber, thinly sliced

Dressing:

1 t Dijon mustard

1 t balsamic vinegar

¼ c extra-virgin olive oil

1 t lemon juice

Pinch of salt

1)    To make the dressing: In a small bowl or liquid measuring cup, combine the mustard and vinegar with a small whisk. Slowly pour in the olive oil while whisking together to emulsify. Mix in lemon juice and salt.

2)    To assemble salad: In a large bowl, toss all the ingredients gently to incorporate.
