As you have probably noticed, our meals often come with a side of sweet potato one way or another. On occasions, you might get lucky enough to have one of our stuffed sweet potatoes. Sweet potatoes are rich in beta carotene, high in fiber, and very filling. Needless to say, we are big fans, so we have decided to clue you in on two of our favorite recipes.

Sweet Potato Breakfast Hash


1 cubed sweet potato

1 tablespoon olive oil

½ cup diced onion

½ cup chopped bell pepper

1 cup raw spinach

½ teaspoon cumin

½ teaspoon paprika

1 dash of S&P

2 eggs


  1. Cook down onions in olive oil
  2. Add sweet potato, cook till soft
  3. Add the rest of the vegetables
  4. Crack eggs over the hot hash
  5. Sprinkle seasoning
  6. ENJOY!

Sweet Potato Brownies


1 sweet potato

1 cup pitted dates

½ avocado

½ cup applesauce

2/3 cup almond flour

½ coconut flour

1 teaspoon baking powder

5 tablespoon cocoa powder

2 tablespoon brown sugar

1 teaspoon vanilla


  1. Heat over to 350 degrees F
  2. Boil sweet potato in chunks for 20 minutes
  3. Put sweet potatoes and dates in food processor
  4. Add in wet ingredients
  5. Add in dry ingredients
  6. Pour in a greased 9 by 9 baking pan
  7. Cook for 25-30 minutes, then cool
  8. ENJOY!
